Eat This

       

The sun has decided to turn on it’s intensity on high.  The forecast projects weather in the mid-upper 80s all week; today it’s 90.  Believe it or not, it seems like forever since we’ve had warm weather.  Our summer never quite materialized last year and the winter/spring has been colder and wetter than normal.  Suddenly, I’m faced with this gorgeous weather, a desire to get outside and fresh meals.  Clearly, it’s time to bust out with my favorite salad.  Super filling and nutritious, I love it because there’s little to no cooking involved and it tastes so delicious.  Cool and cleansing, if I make a big batch I can eat this for every meal, especially if I pile it on pita bread.  A visually appealing salad I add more or less ingredients until the color look well balanced.  It’s been a huge hit at every party and it’s so easy to make.

Flo’s Favorite Bean Salad

1 red pepper, chopped

1 red onion, chopped

1 bag of baby lima beans

1 bag of corn

1 bunch of cilantro, chopped finely

2 cans of black beans, drained and rinsed

4 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

Either boil or microwave the lima beans and corn to your liking.  Not too soft or the lima beans will fall apart in the salad.

Toss everything together.  Add more oil and vinegar to taste but keep the ratio the same.  Viola!  Keeps really well in the fridge and tastes even better the next day.
